Abraham Salum, born in Mexico City, is the chef-owner of Salum Restaurant in Dallas. Trained in Mexico, France, and Belgium, he blends Mexican, Italian, Spanish, and Lebanese influences into refined yet approachable cuisine. Since opening Salum in 2005, he has earned acclaim for seasonal menus, global inspiration, and a warm, inclusive philosophy: honor ingredients, embrace diversity, and bring people together at the table.

“Celebrated chef and longtime Dallas restaurateur Abraham Salum draws on his immigrant roots to create a collection of 75 recipes that is both polished and playful, reflecting his Lebanese, Italian, Mexican, and Spanish heritage. The book is organized by food type—cheeses, fruits, greens and vegetables, pastas and risottos, fowl, sugar and sweets, and more—making it easier for cooks to focus on fresh local ingredients. Helpful cooking tips, nuggets of culinary history, and expert wine and beverage pairing suggestions sprinkled throughout are informative and inspiring. The recipes are as ambitious as they are tempting: sweet chocolate-date tamales; andouille sausage, cheddar, and mustard biscuits; Mayan citrus salad, cumin and paprika spiced beef empanadas; and other signature dishes from his restaurant are presented with clear step-by-step guidance and an abundance of artfully styled color photographs.
