Role of yeast strains in a Medoc red wine

Since the takeover of Chteau Rauzan-Sgla in 1994 by Chanel, this Second Cru Class of the Mdoc has undergone a revival thanks to numerous investments. Classified as AOC Margaux, the 77-hectare vineyard is of an atypical size for this appellation. However, the majority of the grape varieties (Cabernet Sauvignon and Merlot) represent the Mdoc. At the viticultural level, the property can be considered as an example of modernity at the service of tradition. The techniques respecting better the ecosystem and the environment are privileged, by not forgetting the quality of the grape and the wine.
