Taste perception is a critical sense for basic food appraisal and confers the organism with valuable discriminatory power. This process is an oral chemical sense actuated by the receptor cells congregated within different subpopulations of taste buds in the gustatory papillae of the tongue and palate. Rabbits are considered the strongest animal in taste properties between species due to their possession for a large number of taste buds distributed on different papillae. Despite dozens of published articles about the development of gustatory papillae, little is known about the development of gustatory structures in rabbit. This book aims to present valuable information on the embryological and morphological aspects of the rabbit gustatory papillae. As well, it involves a comprehensive review for the development of gustatory structures in other animals. Likewise, this book includes a particular chapter for the adopted techniques that enable the researchers to investigate these structures. In the near future, the developmental aspects of the taste buds may be used for biotechnological applications used for rabbit production.
