Raisin is one of the important processed product obtained from grapes. Raisins are prepared mainly from seedless grapes. In India both seedless and seeded varieties are used for raisin making. The Seeded raisins called as 'Manuka' are used for their therapeutic value; while seedless raisins known as 'Kishmish' are used at festive occasions both religious and social. However, the complex nature of fruits and its biological properties continues to pose a major challenge for process engineers.
