The objectives of this work is to determine initially the importance of celiac disease in the municipality of Tebessa, to assess the nutritional and health status of the celiac population of Tebessa and then to approach the dietetics associated with the gluten-free diet with this population. Over a period of 14 years, from 2000 to 2014, the results obtained show that celiac disease is common in Tebessa (1.11 ). The nutritional and health status of celiac patients in the commune of Tebessa is worrying. The main immediate consequence is nutritional: effect on the corpulence of the subjects. In subjects under 18 years old, 16% of boys and 39% of girls are thin. In adults, 52% of patients have a normal BMI, 18% suffer from grade I malnutrition, 7% from grade II malnutrition, and 4% from grade III malnutrition. The second consequence is anemia, which affects 64% of patients. Adherence to the gluten-free diet was poor for the majority of the subjects followed. Strict adherence to the GFD was reported in only 19% of cases. Several factors influence compliance with the GFD.
